THE PERFECT STEAK
INSTRUCTIONS
Preheat Grill to 275° F
Place well seasoned steaks on stainless steel cooking grate with Conveggtor or other indirect method
Insert thermometer and set to alert at internal temp of 125-135° F depending on your preference of "doneness". Usually takes around 45-60 minutes.
Remove when at temp and rest for 10-15 minutes
Preheat cast iron skillet or cast iron grate to screamingly hot temperatures
Sear steaks for one minute each side
Serve immediately
INTERNAL TEMPERATURE GUIDE:
Rare: 125° F
Medium Rare: 130° F
Medium: 140° F
Well done: 160° F (if you’re cooking to this degree of doneness you’re going to make me very upset…)
